G&C BBQ Company isn’t open yet. In fact, we’re still years away. This site is about everything that happens between having the crazy idea to open a restaurant and eventually turning on the lights for the first time.

Along the way, I’ll be developing recipes, testing sandwiches, making mistakes, changing my mind, learning the business, working with architects, designing commercial kitchens, developing the perfect aesthetic, finding suppliers, hiring a team, and figuring out what G&C should ultimately become. I’m documenting all of it - the successes, the failures, and probably more than a few questionable decisions.
